Method

For the Cordial: Put every components inside a pan, heat until it reaches a light boil, agitating to dissolve. After that, take off the stove and leave to cool entirely. Decant into a sterilised bottle, seal and store in the fridge, where it will keep for around a month.

To make Batch Mix: Combine every liquid ingredients into one big jug, leave to sit for one hour, then filter it preferably using a fine cloth, to ensure it's completely strained.

When ready to serve: Pour 85ml from the premix into your cocktail shaker containing ice, gently stirring lightly for a minute to chill. Strain into a chilled martini glass or similar, top with a few cranberries adding the final touch using a quick spritz with the mandarin essence above the glass.
